Here are the details for the avocado toast with peaches and honey: First, toast your favorite bread. I like Ezekiel bread because it’s filled with sprouted grains and holds-up under the heft of all that avocado goodness.
Then, add 1/2 avocado sliced, 1/2 a peach sliced and a drizzle of honey, about a teaspoon. Finish with two or three mint leaves torn and sprinkled on top.
For the avocado and kumquat toast: On top of your toast add 1/2 an avocado sliced and two kumquats sliced and deseeded.
How simple is that?
I’m laughing so hard right now because I usually just smash the heck out of the avocado and smear it on like cream cheese and sprinkle with some sea salt, but you take the time to cut them up and make a beautiful presentation! Well done, Val, as always:)!
