Once fall hits, this soup always finds its way to my table.
Today is the first day of fall! In preparation, I made a big batch of lentil soup this morning so we could just heat it up whenever we’re ready to eat. For me, nothing says “fall” quite like a hearty bowl of soup. It seems strange to me that this is the first day of fall.
This soup is layered with flavor, it epitomizes the green sprouting shoots of spring. The bright color alone announces that winter is left behind. Tangy feta, pureed sweet peas, spicy jalapeno and earthy savory, combined with the pop of fresh whole peas, is a celebration of texture and flavor and well, spring.
