Stone fruit is at its peak season, so grab ‘em while the gettin’s good and then use them to make this perfect peach ice cream.
I had always thought the inside of the peach pit was poisonous, but with the help of a meat mallet, I whopped open a pit to discover a sweet almond smell and taste–practically marzipan with a just a bit of bitterness.
I realize it was a lot of work and a mildly insane undertaking the morning before a big trip, but these were really darn good peaches.
